Mussel gratin tapas recipe

Preparation time: 20 minutes
Cooking time: 15 minutes

Ingredients (serves 4)
1.5 litres mussels
1.5 tablespoons ketchup
2 tablespoons grated gruyère
1 garlic clove

Clean the mussels, remove the beards (the stringy bits) and put in a saucepan. Cover and cook over a high heat untiil the mussels have opened, being careful not to cook them for too long. Once opened, remove them from the pan.

Remove the upper shells and arrange the mussels in an ovenproof dish. Spread the ketchup over the mussels and sprinkle with the grated gruyère and finely chopped garlic. Place under the grill for 5 minutes to brown.

Add pepper and serve at once.

Tip: Buy large Spanish mussels if possible for a bigger taste. For something a little different, try replacing the ketchup with tomato purée and the gruyère with parmesan. Add basil before serving for a green flourish!
