by Laurence-Emmanuelle Bédard Published on June 8, 2015

Finally – the sun is back! What a winter! To make the most out of this great weather, we need some quick, easy, and (above all) refreshing cocktails, perfect to help you and your friends enjoy a sunny happy hour or to lengthen balmy nights on balconies and terraces. Here are 3 recipes for tasty, original, and thirst-quenching cocktails!

The Malibu Lemon Mojito

Sweet – but not overly, this cocktail is ideal for an afternoon in the sun.

  • 45 ml dark rum
  • A fresh lime
  • Some watermelon pieces
  • A few mint leaves
  • Cane sugar
  • Carbonated water

Mix 1.5 oz Malibu rum with lime juice, a few pieces of watermelon, mint, and cane sugar. Strain the mixture into a glass and add ice, soda water, mint leaves, and the remaining pieces of watermelon.

Alabama Slammer

A timeless classic!

  • 30 ml Amaretto
  • 30 ml Southern Comfort
  • 15 ml plum liqueur
  • 45 ml orange juice
  • A dash of lemon juice

Mix the 3 alcohols in an Old Fashion glass. Fill with orange juice and a dash of lemon juice. Decorate according to your whim, with orange slices or candied cherries, for example.

The Royal Splash

A tangy and fruity cocktail, the queen of the sunny happy hour.

  • 45 ml whisky
  • 60 ml pineapple juice
  • 60 ml cranberry juice
  • Orange slices or pineapple chunks
  • Ice

In a shaker filled with ice, pour the whisky, pineapple juice, and cranberry juice. Shake well in order to cool the mixture consistently, then pour – with the ice cubes – in a glass. Garnish with a slice of orange or a chunk of pineapple.

The Fujiyama

A drink for sweet tooths, perfect to enjoy with friends around the pool.

  • 30 ml (1 oz) Mangoyan liqueur
  • 40 g (4 tbsp) fresh mango
  • 30 g (3 tbsp) vanilla ice cream
  • 20 ml (3/4 oz) medium maple syrup
  • Ice cubes
  • Maple flakes, to taste

In a blender, purée the first 5 ingredients. Pour into any martini glass, forming a mound. Sprinkle with maple flakes to decorate.

Banana Daiquiri

An original and refreshing variation on the traditional strawberry daiquiri!

  • 45 ml white rum
  • 15 ml Triple sec
  • 1 banana
  • 45 ml lemon juice
  • 15 ml sugar

Grind all ingredients in a blender, while adding 1 cup of ice cubes, until you achieve a homogeneous mixture. Serve in a champagne flute and garnish with a cherry.
