Tomates provençales de Sophie
6 large, firm tomatoes
4 cloves garlic
2 tablespoons chopped parsley
3 tablespoons olive oil
4 tablespoons breadcrumbs S
alt & pepper
Cut tomatoes in half, salt, and leave to stand on a plate, to eliminate water. I
n a bowl, mix the peeled, chopped garlic with the parsley and oil.
Season and dip each tomato half into mixture, before rolling in breadcrumbs.
Barbecue for five minutes, turning frequently.
