Cooking with potatoes: Good honest food

This dish is a delicious crowd pleaser - perfect for dinner parties.

Serves 4
800g salad potatoes, cut into 1cm slices
1 red onion, sliced
2 cloves garlic, crushed
250g cherry tomatoes
2 tbsp olive oil
50g pine nuts (optional)
125g feta, crumbled

How to make:
1. Preheat the oven to 200oC, gas mark 6.
2. Place the potato, onion, garlic, tomatoes, oil and pine nuts (if using) on a large baking tray and mix well.
3. Bake for 25 minutes, turning once during cooking.
4. Stir in the feta and cook for a further 5 minutes until the potatoes are tender.
5. Season to taste.
6. Serve hot.

Tip: If you're having friends over for supper why not add 150g defrosted prawns with the feta cheese for the final 5 minutes of cooking, then serve on a bed of lightly wilted spinach.
