Soya milk is made from soybeans that are ground in water and filtered. It's usually sweetened and enriched with calcium (most of the time in the form of lithotamne, a type of seaweed). Read the label to check whether it's flavoured or not. Vanilla soya mik is great as a drink, but not so good in a sauce! Advantages: healthy and easy to digest. It has almost the same amount of protein as cow's milk, and it's the only dairy-free type of milk that can be made into tofu and yogourts. Disadvantages: its estrogen content means that it should be drunk in moderation before the age of 3 (especially for boys) and if there is a history of breast cancer in the family. Its slightly 'beany' taste doesn't suit everyone, but try out a few different brands before passing judgment!
