Anarachy in a Jar

These adorable jams are available at Anthropologie stores nationwide as well as grocery stores and cheese shops in NY and the tri-state area. Laena McCarthy, scientist/academic turned founder of Anarchy in a Jar, is also the author of Jam On: The Craft of Canning Fruit.

We love this jam—for its fresh quality ingredients, and for its outrageously inventive flavors such as strawberry balsamic; Easy Like Sunday Morning Blueberry Preserves; Grapefruit and Smoked Salt Marmalade; and Hot Fireman’s Pear Jam with chipotle and cinnamon. The company makes over fourteen varieties of jam, jelly, marmalade, chutney and pickled fruit.
“I always made jam—I learned from my mother and I grew up in the countryside outside the city and she always highlighted using herbs and local fruits to highlight the seasons and bring out the flavors,” says Laena. “I also traveled a lot in my twenties, working for National Science Foundation, and learned how other people around the world made jam.”
Jam was always part of Laena’s life, and it was only a matter of finding inspiration, the right time—and the right name—for starting a company.

“I came up with the name long before I actually had the company officially, back when I was first making jam and was learning how to hone my recipe. I used to tell people it was so good it was anarchy in a jar. That was my tongue in cheek joke about it and then it kind of stuck. It helped that the flavors were kind of unconventional and there are kind of unique things about it in terms of process—those things help highlight the idea of it being anarchy.”
