Gordon Ramsay - how to roast a turkey

Gordon Ramsaymay have a foul mouth but he sure knows how to cook fowl... sorry.

Ramsay recommends delicious breadcrumb and herb stuffing as the perfect accompaniment to roast turkey.

Herby breadcrumb stuffing

• 200g/7oz white breadcrumbs
• 125g/4½oz butter
• 1 onion, finely chopped
• thyme - 1 sprig (leave only, chopped)
• rosemary - 1 sprig (leave only, chopped)
• 6 sage leaves (fresh)
• Zest of 1 lemon,
• 50g/2oz pine nuts
• 3 tbsp parsley, (fresh) chopped
• 1 tsp sea salt
• freshly ground black pepper

1 - Melt butter over a medium heat in a large frying pan.
2 - Add onions and garlic and fry until soft and just starting to colour
3 - Add the herbs and fry for one minute
4 - Add the breadcrumbs and stir to soak up the buttery mix
5 - Add the pine nuts and zest
6 - Add seasoning
7 - Cook until brown and crispy (7-8 mins) and serve immediately.
