Recipe: Calypso Pork

675g/1 ½ lb cubed pork leg or shoulder
350g/12oz sweet potatoes, peeled and cubed
1 onion, chopped
2 cloves garlic, crushed
1 red chili, de-seeded and chopped
½ tsp ground allspice
½ tsp ground ginger
2 tbsp soy sauce
300ml/½ pt Florida grapefruit juice
Preheat the oven to 180 C,350 F, Gas 4. Place all the ingredients in a large ovenproof dish and mix well. Cover and bake for 1 hour.
Remove the lid and bake for a further 30 minutes to allow the sauce to thicken slightly. Serve with brown rice and char grilled corn on the cobs.
