Recipe: Smoked Mackerel and Florida Grapefruit Salad
4 tbsp extra virgin olive oil
2 slices bread, crusts removed
4 fillets smoked mackerel
2 baby gem lettuces
4 spring onions
2 ripe avocados
2 Florida grapefruits
Small bunch chopped parsley
2 tbsp runny honey
Preheat the oven to 200C/gas 6. Cut the bread into cubes and pop them in a bowl. Pour in two tablespoons of the olive oil and toss to coat all the bread. Bake the bread cubes for about 5 minutes, until golden and crisp. Remove from the oven and set aside.
Separate the lettuce into leaves, wash well and dry. Transfer to a large bowl. Trim the spring onions and slice them diagonally. Toss them into the bowl with the lettuce. Peel the grapefruits and cut them into segments. Toss the segments into the bowl. Squeeze any remaining juice into a small bowl and reserve.
Break the mackerel into bite sized pieces. Peel the avocados, remove the stone and cut into slices. Mix the remaining olive oil, the honey and the reserved grapefruit together until smooth. Arrange the lettuce attractively on plates. Scatter over the mackerel and avocado, then spoon over the dressing. Scatter over the croutons and parsley and serve at once.
