British Egg Week begins this week (8th-15th October) and will be launched by Marguerite Patten OBE, the original celebrity chef, at the House of Commons.

But this year also marks 50 years since the British Lion Mark made its first appearance, stamped onto eggshells as an indicator of quality. The original Lion was introduced in 1957 to denote eggs marketed by the British Egg Marketing Board. It was reintroduced in 1998 to provide a stamp for British eggs produced according to the highest standards of food safety.

For the occasion, we've put together a collection of imaginative recipes created by Michelin three-star chef Guy Martin which reinvent the egg...not forgetting some time-honoured classics.
