Cooking bananas

Plantain or cooking bananas are a staple of African, West Indian and South American cuisine. They have a much thicker, greener skin than dessert bananas and their fruit isn't as sweet. They aren't edible raw, and are either grilled or cooked in water.

Cooking bananas are often used like any vegetable, in the same way as sweet potatoes - their consistency and creamy texture, as well as their lovely flavour, make them ideal for curries and spicy dishes.
