Crunchy Wheat and Apple Salad

Preparation: 20 mins
Cooking bulgur wheat: 10 to 20 mins

Ingredients for 6:
2 Granny Smith, Fuji or Pink Lady apples
250g bulgur wheat
1/2 cucumber
150g cheese
75g nuts
1 small bunch green grapes
1/2 bunch chives
5 stems chervil
1 tablespoon cider vinegar
3 tablespoons olive oil
Salt & pepper

Preparation:
Pour bulgur wheat into a pan of boiling salt water. Cook according to instructions on packet, strain and leave to cool.

Cut cucumber in half, remove seeds and dice flesh.

Peel apples, core, quarter and dice.

Cut cheese into small chunks.

Slice grapes in half, crush nuts in blender.

Pour all ingredients into a large bowl, over cooled bulgur wheat, then add snipped chives and chervil.

Prepare a sauce, by mixing olive oil and vinegar in a bowl, season and pour over salad.

Mix and chill before serving.
