Chicken and vegetable korma

Serves 4

500g jar Uncle Ben’s
Korma sauce
2 250g pouches of Uncle Ben’s
Express Basmati rice
1 onion, roughly chopped
3 cooked skinless, boneless
chicken breasts, cut into chunks
225g small broccoli florets
125g fine green beans,
2tsp vegetable oil

How to make: 
1. Heat the vegetable oil in a large frying pan and fry the onion for 2 minutes, stirring frequently until it begins to brown.

2. Add the chicken and pour over the Uncle Ben’s Korma sauce and simmer gently for 8 minutes

3. Meanwhile, cook the broccoli and fine green beans in a pan of boiling water for 5-6 minutes until just tender. Drain well and add to the chicken Korma

4. Heat two pouches of Uncle Ben’s Express Basmati rice according to packet instructions, and serve.
