Chilli beef and red pepper Mexican style wraps


Serves 4

Ingredients:
500g jar Uncle Ben’s Medium
Chilli con Carne sauce
2 250g pouches Uncle Ben’s
Express Long Grain rice
500g lean minced beef
1 red onion, roughly chopped
1 red pepper, deseeded, cored
and cut into chunks
198g tinned sweetcorn kernels,
drained
8 outer leaves from an iceberg
lettuce
2 spring onions, trimmed and
finely shredded
2tsp vegetable oil

How to make:
1. Heat the oil in a large frying pan and fry the minced beef, onion and red pepper for 3-4 minutes over a high heat until browned. Stir in the sweetcorn and Uncle Ben’s Medium Chilli con Carne sauce and simmer for 10 minutes.

2. Divide the mixture between the lettuce leaves and scatter over some shredded spring onion. Fold one edge of the lettuce over the filling, then fold in the two sides of the lettuce and roll up like a swiss roll to completely enclose the filling.

3. Heat two pouches of Uncle Ben’s Express Long Grain rice according to packet
instructions and serve immediately.
